Zucchini Meatloaf

Description

Eat your vegetables at the same time as your are enjoying this delicious meatloaf. Your kids and family won't know that this meal has zucchini mixed in unless you tell them. It is much healthier too because it is made with ground turkey instead of ground

Ingredients

2 eggs, lightly beaten
1 c. zucchini, shredded
1/2 c. seasoned bread crumbs
1/2 c. onion, chopped
1/4 cup chopped fresh parsley
1 t. salt
1/2 t. dried oregano leaves
1/4 t. pepper
1/2 t. garlic powder
1 lb. lean ground turkey


Topping:
1 1/2 T. brown sugar, packed
1/4 c.ketchup
3 T. Dijon Mustard, or your choice of mustard

Preheat oven to 350°F. Grease a 9 inch pie pan.

In large bowl, mix all ingredients until well blended. Press mixture into pie pan.

Bake for 1 hour.

In small bowl, mix brown sugar, ketchup and Dijon mustard.

Remove meat loaf from oven. Spread mixture over meatloaf.

Return to oven; bake 10 to 15 minutes longer or until thoroughly cooked in center. Let stand 5 minutes before serving.
