Potato Chip Mexican Beef Casserole

Description

Bump up the traditional Mexican beef casserole with a bag of potato chips! Your whole family will be glad that you did!

Ingredients

1 family size bag chips, your choice of flavor
1 onion, sliced, diced or grated
1 lb. lean ground beef
2 cloves garlic, minced
1 – 2 t. chili powder
1 c. salsa, your choice
1 c. sour cream, regular or reduced-fat
1 can cream of chicken or mushroom soup, regular or reduced-fat
2 c. shredded Cheddar or Mexican cheese, regular or reduced-fat

Preheat oven to 350 degrees. Grease a 2 quart, 9x9 inch or 8x8 inch casserole dish. Spray foil for top with non-stick cooking spray.

Place salsa in a strainer to drain while preparing beef.

In a large skillet, brown the ground beef with onion and garlic. Drain grease. Add chili powder. Stir; emove from heat.

In a large bowl, combine drained salsa, sour cream, soup and 1 cup cheese. Add in beef and stir well.

Place a layer of slightly crushed chips in the bottom the casserole dish. Add half of the ground beef mixture. Repeat layers. Finally, top with an additional 1 - 1 1⁄2 cups drushed chips and remaining cheese.

Cover the pan with the prepared foil. Cook 25 minutes, then uncover and cook for 15 minutes more or just until hot and bubbly around the edges.

This casserole is great served with flour tortillas on the side.
