Pizza Zucchini Boats

Description

These zucchini boats are much like pizza only healthier for you. Add toppings and seasonings to your taste and serve as a main dish, appetizer or snack.

Ingredients

4 medium zucchini
2T. cold pressed, extra virgin olive oil, plus extra for drizzling
1 small yellow onion, diced
½ sweet bell pepper, any color, diced
3 cloves garlic, minced
1 large tomato, sliced or diced or cherry tomatoes, sliced in halves
several basil leaves, chopped
1/4- 1/3 c. grated Pecorino or Parmesan cheese

½ c. shredded Mozzarella, optional
1 c. marinara sauce, optional
**optional ingredients: use your favorite pizza toppings such as spinach, olives, artichoke hearts to the mixture, if desired. You could even add slices of pepperoni, if you'd like.

Preheat oven to 425 degrees. Lightly grease a baking dish or line a baking sheet with parchment paper or aluminum foil.

Trim the stem end of the zucchini; slice the zucchini in half lengthwise. Carefully scoop out the soft center flesh with a spoon; set aside. Place the zucchini halves on the baking dish; drizzle with olive oil; season with salt and pepper.

Finely chop the scooped zucchini flesh; set aside.

Heat the olive oil in a large skillet over medium heat; saute the zucchini flesh, onion, pepper and garlic until soft, tender and translucent. Add the tomatoes; season with salt and pepper; saute until the tomatoes are soft and have released their juices. Turn off the heat; stir in the basil and Parmesan cheese.

Spoon the mixture evenly into each zucchini boat; top with marinara sauce and mozzarella cheese, if desired.

Bake 15-20 minutes until cheese is melted and zucchini is tender.

Makes 8 boats.
