This casserole makes a great meal meatless meal. It has four different cheeses, marinara/spaghetti sauce, ziti and seasonings to make an easy, delicious dish.
16 oz. package ziti pasta
1 egg, lightly beaten
15 oz. carton part-skim Ricotta cheese
1/2 c. grated Parmesan cheese, divided
32 oz. meatless spaghetti or marinara sauce
8 oz. shredded part-skim Mozzarella cheese or more, if desired
1/4 cup freshly grated Pecorino Romano
1/2 t. salt
1/4 t. pepper
onion powder, to taste
1 t. garlic powder, or to taste
1 T. chopped fresh parsley
Cook ziti according to package directions in well salted boiling water, about 8 minutes. Drain; set aside.
Preheat oven to 375 degrees. Grease a 13 x 9 inch baking dish with non-stick cooking spray.
In a small bowl, combine egg, Ricotta cheese and 1/4 c. Parmesan cheese and seasonings.
Spread 1 c. spaghetti sauce in the prepared baking dish. Top with a third of the pasta, half of the Ricotta mixture, 2/3 c. Mozzarella cheese, 1 T. Parmesan cheese and 1 c. sauce. Repeat layers of pasta, Ricotta mixture and Mozzarella cheese. Sprinkle with 2 T. Parmesan cheese. Top with remaining pasta, spaghetti sauce, Mozzarella, Pecorino Romano and Parmesan cheeses.
Cover; bake 45-50 minutes or until heated through.
