Mexican Rice Dinner

Description

One pot meals are so easy to make. This one can be made in a little less than 30 minutes. Customize it to your own taste using beans or corn, ground beef, ground turkey or chicken and then add your favorite toppings.

Ingredients

1 lb. lean ground beef
1 c. onion, finely chopped or minced
1 packet taco seasoning
1 c. frozen corn
1 c. salsa
1 c. uncooked long grain white rice
2 c. chicken stock
10 oz. can ro-tel
1 c. shredded Cheddar or Mexican cheese

Toppings:
black olives
diced tomatoes
avocado
sour cream
fresh cilantro

In a large skillet over medium-high heat, brown ground beef, breaking it apart while cooking; add onions; cook until soft. Discard any grease. Stir in taco seasoning. Add corn, salsa, rice, tomatoes, and chicken stock; stir until well mixed. Bring to a boil; cover and reduce heat to a simmer; simmer about 15 minutes, or until the rice is cooked through, and most of the liquid is absorbed.

Sprinkle cheese over the top; cover; heat until cheese is melted.

Garnish with desired toppings. Serve.
