Bourbon and Brown Sugar Glazed Meatloaf

Description

This glazed meatloaf will be one of the best that you will ever make. It's made with ground beef and pork, onion, egg and breadcrumbs and glazed with jam, brown sugar, BBQ sauce and bourbon. Serve with your favorite sides.

Ingredients

1 lb. ground beef
1 lb. ground pork
1 egg, beaten
1/2 c. freshly torn or dried breadcrumbs
1/2 yellow onion, peeled and grated or minced
1 t. salt
freshly ground black pepper, to taste

Glaze;
1 c. fruit jam or preserves, like apricot, cherry or your favorite
1/4 c. dark or regular brown sugar
1 T. hot chili sauce or Sriracha, or to taste
1/2 c. bourbon, whiskey or cognac
1/2 c. BBQ sauce
1/4 c. water

Preheat oven to 350 degrees. Line a loaf pan or a baking sheet with foil and spray with a non-stick cooking spray.

Glaze:
Place all glaze ingredients in a saucepan; stir to combine. Bring to a boil; lower the heat; simmer gently, uncovered, for about 10 minutes, until thickened. If a chunky jam was used, you may want to use an immersion blender to puree the glaze.

Put both meats in a large mixing bowl, breaking into small pieces while adding.

Add beaten egg, breadcrumbs, onion, salt and pepper to the bowl; mix everything well with your hands, without over mixing it. Form the mixture into a loaf, not too tall and not too wide, getting it even from end to end so it cooks evenly.

Place the loaf on the prepared loaf pan or baking sheet. Spread a layer of glaze all over the meatloaf. Bake about 60 minutes, or until a thermometer inserted in the center reads 160 degrees, basting another layer of sauce on the meat halfway through the cooking, after about 30 minutes.

Remove the meat; allow to rest for a few minutes before slicing.

Slather on a third coat of glaze that has been reheated on the stove just before serving.

Serve with extra sauce on the side.
