Ham and Swiss Pasta Roll Up Gratin

Description

Be careful! This easy to prepare dish is comforting and absolutely delicious. So delicious in fact, that it just could be addicting.

Ingredients

5 oz. fresh pasta sheets, about three 6 x 14 inch sheets (refrigerated section of supermarket)
1/2 lb. very thinly sliced Black Forest ham (or smoked turkey slices)
7 oz. very thinly sliced Swiss cheese - about 18 slices
1/2 c. heavy cream, plus a bit more
1/4 c. shredded Parmesan cheese
1/2 c. shredded Italian blend cheese

fresh thyme leaves, for garnish

Preheat oven to 375 degrees.

Lay out the pasta sheets. Lay down one layer of ham on the bottom, overlap it slightly, and then the cheese on top. Space out the cheese a tiny bit. Roll up the sheet of pasta tightly and firmly; slice it with a sharp knife into one and a quarter inch pieces. Do this with remaining pasta, ham, and cheese. 12-14 rolls are needed to fit into an 8 inch skillet.

Coat the bottom of a small 8 inch ovenproof skillet (cast iron is great) with a thin layer of cream; arrange the rounds, cut side up, fitting them snugly together.

Whisk cream and Parmesan cheese; pour evenly over the pasta. Cover loosely with foil; bake 25 minutes until lightly browned and bubbly.

Set oven to broil.

Remove the skillet from the oven; top with remaining cheese; finish under the broiler until cheese is melted and browned, just a few minutes, watching carefully.

Garnish with fresh thyme. Serve immediately.

4 servings.

** If your pasta sheets come in larger sheets, that’s fine. You can make larger ‘logs’ to slice, or cut the pasta down in size before starting.


The fresh thyme leaves for garnish seems like a little thing, but fresh herbs are so potent, and the thyme gives this dish that fresh finish it needs.
