Description
Make a sweet corn blueberry salad that is healthy, but doesn't taste like it! This is a clean, light, refreshing salad packed with fresh ingredients and topped off with a wonderful honey lime dressing.
Ingredients
- 6 ears sweet corn
- 1 c. blueberries, fresh
- 1/2 c. feta cheese, crumbled
- 1/4 c. fresh cilantro, chopped
- 3-4 green onions, diced
- 1 jalapeno pepper, seeded and minced
- 2 T. lime juice, freshly squeezed
- 2 T. olive oil
- 1 T. honey
- 1/2 t. ground cumin
- kosher salt, to taste
- pepper, to taste
Steps
- Bring a large covered pot of water to a boil over high heat.
- Husk corn, remove silks, cut off stem at bottom, boil for 3 minutes. Remove corn from the pot, cool. When cool, cut the kernels off the cob.
- In a large bowl, add corn, blueberries, feta cheese, cilantro, green onions and jalapeno pepper.
