Description
This delicious potato dish is like a baked potato but in casserole form. The bacon can be omitted for a vegetarian option. It's simple to prepare and is ready in a little over an hour.
Ingredients
- non-stick cooking spray
- 3 lb. yellow Yukon Gold potatoes, peeled and diced
- 1 small yellow onion, diced
- 2 t. minced garlic
- 1 lb. bacon, cooked and crumbled (not thick-cut)
- 1 c. mayonnaise
- 1 c. shredded Cheddar cheese
- 1 t. onion powder
- 1 t. garlic powder
- 1/2 t. salt
- 1/4 t. black pepper
- 2 green onions, sliced
Steps
- Preheat the oven to 350 degrees F. Spray a 9×13" baking dish with non-stick cooking spray.
- Place potatoes, onion, garlic, cooked bacon, mayonnaise, Cheddar cheese, onion powder, garlic powder, salt and pepper, in the prepared baking dish. Stir well. Cover the dish with aluminum foil.
- Bake 1 hour or until the potatoes are tender. Stir.
