Cauliflower Salad

Description

This salad is much like a potato salad but instead of potatoes, use cauliflower! It is just as good, and just may become a family favorite that you will want to take with you to get-togethers from now on!

Ingredients

1 head cauliflower
6 boiled eggs
1/3 cup Miracle Whip or mayonnaise (light has more carbs!)
3 T. mustard, your choice of type
3 T pickle relish, your choice of type
1/8 cup of chopped raw onion, or to taste
salt/pepper to taste

Cook cauliflower in microwave, steam or boil until tender, cut in bite size pieces. Hard boil 6 eggs, peel, rinse and then separate yokes into a bowl, mash the yolk and cut the whites into small bite size pieces then blend together.

Mix all ingredients together. You may garnish with egg slices and parsley if you would like.

Chill over night.
