Description

Use as an appetizer or as a side like french fries. This recipe is so versatile, you can change up the ingredients as you wish. Leave out some of the zucchini and add shredded carrots, onion, red or green peppers. It's up to you! Whatever you decide to do

Ingredients

1/2 lb. zucchini, grated
1 t. salt
1/4 c. all-purpose flour
1/4 c. feta, crumbled
2 cloves garlic, minced
1 large egg, beaten
salt and pepper, to taste
2 T. olive oil
2 T. fresh dill, minced

Put grated zucchini in a strainer in the sink, add the teaspoon of salt and gently mix. After letting the zucchini sit for 10 minutes, drain iti with a cloth or paper towels.

In a large bowl, combine zucchini, flour, feta, dill, garlic, and egg. Season with salt and pepper to taste.

Heat oil in a large skillet over medium-high heat. When oil is warm, scoop a tablespoon of batter for each fritter into oil. Flatten the scoops a bit with a spatula, cook until the underside is golden-brown, about 2 minutes, then flip and let it cook until the other side is golden brown, about 1 to 2 minutes.

Serve plain, with sour cream yogurt, or sauce of your choosing.
