Description

This healthy salad is delicious and beautiful too. It is simple and quick to make with just a few ingredients like cherry tomatoes, red onions and fresh mint dressed with red wine vinegar, olive oil, salt and pepper.

Ingredients

  • 2 lb. cherry tomatoes, halved
  • 1 c. red onion, thinly sliced
  • ¼ c. mint leaves, loosely packed fresh, shredded
  • 3 T. extra virgin olive oil
  • 2 T. red wine vinegar
  • ½ T. Kosher salt
  • black pepper, freshly ground, to taste

Steps

  1. Put tomatoes in a bowl with onion and mint. Toss with the olive oil and vinegar. Season with salt and pepper.
