Description
This healthy salad is delicious and beautiful too. It is simple and quick to make with just a few ingredients like cherry tomatoes, red onions and fresh mint dressed with red wine vinegar, olive oil, salt and pepper.
Ingredients
- 2 lb. cherry tomatoes, halved
- 1 c. red onion, thinly sliced
- ¼ c. mint leaves, loosely packed fresh, shredded
- 3 T. extra virgin olive oil
- 2 T. red wine vinegar
- ½ T. Kosher salt
- black pepper, freshly ground, to taste
Steps
- Put tomatoes in a bowl with onion and mint. Toss with the olive oil and vinegar. Season with salt and pepper.
