Much like the famous Watergate Salad, this Orange Fluff Salad will deligt everyone at dinner time. Serve it at your next special dinner or a holiday dinner as a side dish, salad, or even a dessert!
1-1 lb. 4 oz. can pineapple, tidbits in 100% pineapple juice, drained
1 can mandarin oranges, drained, with juices reserved
2 small pkgs. instant vanilla pudding mix
1 -16 oz. tub Cool Whip, thawed
2 c.miniature marshmallows
small amount of orange juice
1 c. chopped pecans or walnuts, optional
Stir together some of the mandarin orange juice with the pudding mix until well blended. Gently fold in the Cool Whip and carefully stir in the mandarin oranges, marshmallows, and pecans. Add additional orange juice only if needed so it is moist but not runny. Cover and refrigerate at least one hour or preferably overnight.
Garnish with shredded sweet coconut, chopped nuts, Mandarin orange slices or Maraschino cherries, if desired.
