Description

This light and delicious cake will please family and friends. Make it for St. Patrick's Day or any day of the year.

Ingredients

• 1 box white cake mix
• 2 boxes pistachio instant pudding mix
• 1 c. vegetable oil
• 3 eggs
• 1 c. Ginger Ale, Fresca or 7 Up
• 1¼ c. cold milk
• 8 oz. whipped topping
• shredded coconut, if desired
• chopped pistachios, walnuts or pecans, optional

Steps

1. Preheat oven to 350 degrees. Grease a 9 x 13 inch baking pan.
2. Combine cake mix, 1 box pistachio pudding, oil, eggs, and ginger ale. Mix well; pour into the prepared pan.
3. Bake 30 - 35 minutes or until toothpick inserted into middle of cake comes out clean. Cool completely.
