Watergate Cake

Description

This light and delicious cake will please family and friends. Make it for St. Patrick's Day or any day of the year.

Ingredients

1 box white cake mix
2 boxes pistachio instant pudding mix
1 c. vegetable oil
3 eggs

1 c. Ginger Ale, Fresca or 7 Up
1¼ c. cold milk
8 oz. whipped topping
shredded coconut, if desired
chopped pistachios, walnuts or pecans, optional

Preheat oven to 350 degrees. Grease a 9 x 13 inch baking pan.

Combine cake mix, 1 box pistachio pudding, oil, eggs, and ginger ale. Mix well; pour into the prepared pan.

Bake 30 - 35 minutes or until toothpick inserted into middle of cake comes out clean. Cool completely.

Frosting:
In a medium sized mixing bowl, add cold milk to remaining box of pistachio pudding mix. Stir until combined and pudding begins to thicken. Fold in whipped topping.

Ice cake and garnish with shredded coconut and chopped nuts, if desired.

Store in refrigerator.
