Ginger lovers, you will absolutely love this salad dressing. It's full of wonderful flavors that go with many salads and fresh fruit like apples and pears. It takes just minutes to make and keeps in the fridge for about 10 days.
Ingredients
- ½ c. extra-virgin olive oil
- 2 T. apple cider vinegar, to taste
- 2 T. Dijon mustard, at room temperature

- 2 t. finely grated fresh ginger
- ½ t. fine sea salt
- about 20 grinds of freshly ground black pepper
Steps
- In a small bowl, whisk together all ingredients until fully blended. If mustard is cold, it might need a few minutes to warm up before it fully incorporates.
