French fries and tater tots, move over. These mashed potato puffs are so delicious and easy to make, you'll wonder why it took you so long to make them.
Ingredients
- 2 c. mashed potatoes (leftover mashed potatoes are great to use)
- 3 large eggs, beaten
- 1 c. shredded Cheddar cheese
- 1/4 c. bacon bits or 4 slices bacon, cooked and crumbled
- 1/4 c. freshly chopped chives
- freshly ground black pepper, to taste
- 1 t. granulated garlic
- 1/4 c. shredded or grated Parmesan cheese
- Optional garnishes: sour cream, chives, crumbled bacon
Steps
- Preheat oven to 400 degrees. Grease muffin pans to hold 12 puffs.
- Combine mashed potatoes, eggs, Cheddar cheese, bacon and chives; season with black pepper, to taste.
- Fill each muffin cup evenly with potato mixture; sprinkle each cup with Parmesan cheese. Bake for 30-35 minutes or until golden brown.
