Ritz Cracker Chicken Breast Casserole

Description
Dinner should be easy to prepare, especially on busy weeknights. These chicken breasts are baked with a few ingredients, sour cream, cream of chicken soup and chicken broth and finished with a Ritz cracker topping.
Ingredients
4 boneless, skinless chicken breasts
salt and black pepper, to taste
1 sleeve Ritz crackers, crushed
1/2 c. grated Parmesan cheese
1/2 c. unsalted butter, melted
1 c. sour cream
1 can cream of chicken soup
1/2 c. chicken broth
1 T. fresh parsley, chopped

Preheat oven to 375 degrees F. Grease a 9x13" baking dish.
Season chicken breasts with salt and pepper. Transfer to the prepared baking dish.
Spread sour cream over the chicken.
In a bowl, mix together the crushed Ritz crackers, Parmesan cheese, and melted butter; set aside.
Stir together the cream of chicken soup and chicken broth; pour over the chicken.
Top with the Ritz cracker mixture.
Bake for 35-40 minutes until chicken is cooked and topping is golden.
Let rest a bit before serving. Serve hot, garnished with parsley, if desired.
