Description
Serve this light, colorful salad anytime, but it's perfect for BBQ's, holiday gatherings, potlucks or for family dinner. It's made with fresh ingredients and has a delicious combination of wonderful flavors.
Ingredients
- 2 c. fresh peas
- 1 English cucumber, sliced
- 2 c. cherry or grape tomatoes, halved
- 2 t. salt, or to taste
- freshly ground black pepper
- 1/3 c. olive oil
- 2 t. apple cider vinegar
- 2 t. balsamic vinegar
- 2 t. minced garlic
- 2 t. granulated sugar
- 2 t. minced fresh dill
- dash crushed red pepper flakes
Steps
- Combine peas, cucumber slices, and tomatoes in a large bowl. Season with the salt and pepper. Refrigerate 20 minutes.
- In a small bowl, whisk together the olive oil, both vinegars, and garlic; add the sugar; whisk to combine. Pour over the vegetables; sprinkle on the dill and red pepper flakes.
- Serve immediately or cover and serve within 1 hour. The cucumbers start to pickle if waiting longer.
