Ingredients
2 c. fresh peas
1 English cucumber, sliced
2 c. cherry or grape tomatoes, halved
2 t. salt, or to taste
freshly ground black pepper
1/3 c. olive oil
2 t. apple cider vinegar
2 t. balsamic vinegar
2 t. minced garlic
2 t. granulated sugar
2 t. minced fresh dill
dash crushed red pepper flakes

Combine peas, cucumber slices, and tomatoes in a large bowl. Season with the salt and pepper. Refrigerate 20 minutes.
In a small bowl, whisk together the olive oil, both vinegars, and garlic; add the sugar; whisk to combine. Pour over the vegetables; sprinkle on the dill and red pepper flakes.
Serve immediately or cover and serve within 1 hour. The cucumbers start to pickle if waiting longer.
