Description

This light and refreshing pie is perfect for hot summer days, poolside treats, and fun gatherings. It starts with a buttery store bought graham cracker pie crust that is topped with a light, lemony topping that tastes like a cool glass of lemonade.

Ingredients

8 oz. brick full-fat cream cheese, softened
14 oz. sweetened condensed milk
1/2 c. frozen lemonade concentrate, thawed
1 t. pure lemon extract
3.4 oz. box lemon flavored instant pudding and pie filling
8 oz. frozen Cool Whip, thawed
9 oz. store bought graham cracker pie crust
fresh lemon slices, fresh berries and whipped cream, for optional garnish

In a medium-sized bowl, beat together the cream cheese, sweetened condensed milk, thawed lemonade concentrate, and lemon extract with a handheld mixer on medium-high speed for 1 1/2 to 2 minutes until smooth.

Lower the mixer speed to low; mix in the instant lemon pudding mix; increase the speed to medium; mix for 1 to 1 1/2 minutes until the mixture is smooth and starting to thicken.

Fold in the Cool Whip. Spread the filling into the graham cracker pie crust. Cover.

Refrigerate for at least 8 hours before serving.

Serve cold garnished with lemon slices, fresh berries and dollops of whipped cream.
