Ingredients
- Bruschetta:
- 4 Roma, plum or cherry tomatoes, diced
- 1/4 c. basil leaves, chopped
- 1 garlic clove, minced
- 1 t. extra virgin olive oil
- 1–2 t. balsamic vinegar
- salt, to taste
- Cheese Mixture:
- 8 oz. feta cheese block, crumbled
- 4 oz. of block cream cheese, softened
- 1/2 c. sour cream
- 1 garlic clove, minced
- 1 T. freshly squeezed lemon juice
- 1 T. olive oil
- salt, to taste
- Garnish Options:
- chopped basil leaves, red pepper flakes,
- freshly grated Parmesan cheese
- Serving Options:
- toasted baguette slices, Pita chips, crackers, fresh vegetables
Steps
- Bruschetta Mixture: In a medium bowl, combine the diced tomatoes, basil, garlic, olive oil, balsamic vinegar, and salt; mix well; set aside.
- Cheese Mixture: In another bowl, blend the crumbled feta cheese, cream cheese, sour cream, garlic, lemon juice, olive oil, and salt until smooth and creamy.
- Gently fold the bruschetta mixture into the cheese mixture until well combined.
