Description
This delicious, vegetarian appetizer can be ready in as little as 15 minutes and is perfect for any occasion or gathering. It's a creamy dip that's chock full of the typical bruschetta ingredients.
Ingredients
Bruschetta:
4 Roma, plum or cherry tomatoes, diced
1/4 c. basil leaves, chopped
1 garlic clove, minced
1 t. extra virgin olive oil
1–2 t. balsamic vinegar
salt, to taste
Cheese Mixture:
8 oz. feta cheese block, crumbled
4 oz. of block cream cheese, softened
1/2 c. sour cream
1 garlic clove, minced
1 T. freshly squeezed lemon juice
1 T. olive oil
salt, to taste
Garnish Options:
chopped basil leaves, red pepper flakes,
freshly grated Parmesan cheese
Serving Options:
toasted baguette slices, Pita chips, crackers, fresh vegetables

Bruschetta Mixture: In a medium bowl, combine the diced tomatoes, basil, garlic, olive oil, balsamic vinegar, and salt; mix well; set aside.
Cheese Mixture: In another bowl, blend the crumbled feta cheese, cream cheese, sour cream, garlic, lemon juice, olive oil, and salt until smooth and creamy.
Gently fold the bruschetta mixture into the cheese mixture until well combined.
Garnish with choice of basil, red pepper flakes, and/or freshly grated Parmesan cheese.
Serve with toasted baguette slices, Pita chips, crackers, or fresh vegetables for dipping.
