Salad Ingredients:
8 oz. salad macaroni
1 cu. tiny broccoli florets
1/2 cu. diced cucumber
1/2 cu. finely diced red pepper
1/2 cu. sliced black olives
1/4 cu. very thinly sliced green onion
Dressing Ingredients:
1/2 cu. mayonnaise
2 tsp. white wine or plain vinegar
1/2 tsp. kosher salt, adjust to taste
1/2 tsp. freshly ground black pepper
1/2 tsp. sugar
Cook pasta according to package directions, adding a generous tbl. or so of kosher salt to water as it cooks. Just before noodles are finished cooking, add broccoli to the pot. Let the broccoli boil for about 30 seconds, then drain everything into a large colander. Rinse well with cold water.
Stir together mayonnaise, vinegar, salt, pepper, and sugar in a large mixing bowl. Add cooked pasta and broccoli to bowl and stir well to coat. Add the cucumber, pepper, and onions, stir again. Taste and adjust seasoning. Cover and refrigerate until ready to serve. Stir just before serving.
