Description
Seven layers of goodies make this a delightful salad. Make it for your family, or your next get-together. Leave the bacon out and even vegetarians can enjoy it!
Ingredients
- Salad:
- 1/2 head Iceberg lettuce, chopped into 1 inch pieces
- 4 oz. baby spinach leaves
- 1/4 tsp. kosher salt
- 1/4 tsp. freshly cracked pepper
- 4 hardboiled eggs, peeled and chopped
- 8 oz. bacon, fried and chopped
- 3 large Roma tomatoes, sliced in half, seeds removed, and chopped
- 4 green onions, thinly sliced
- 4 oz. freshly grated cheddar cheese
- 6-8 oz. frozen peas, partially thawed
- Dressing:
- 1/4 cu. sour cream
- 1/4 cu. mayo
- 1 1/2 tsp. sugar
- 1 tsp. fresh dill, minced
Steps
- In a large bowl, layer the salad ingredients in the order they are listed above.
- Stir together the sour cream, mayonnaise, and sugar. Spread the dressing in a thin layer over the peas. Sprinkle with fresh dill.
- Cover and refrigerate up to 8 hours. Toss well, just before serving.
