Description
This pasta salad makes a great side dish for your outdoor BBQs and gatherings. If you don't want to use a mayo dressing , you can substitute it for Italian dressing or dressing of your choice.
Ingredients
- 1 cu. dry elbow macaroni, cooked, rinsed and drained
- 1/3 cu. diced celery
- 1/4 cu. minced red onion, soaked in cold water for 5 minutes- then drained
- 1 tbl. minced flat-leaf parsley
- 1/2 cu. diced vine-ripened tomatoes
- 1/3 cu. mayonnaise
- 3 tbl. sour cream
- 1 tbl. cider vinegar
- 1/2 tsp. dry mustard
- 1/2 tsp. granulated white sugar
- 1/2 tsp. sea salt
- freshly ground black pepper
- 4 slices bacon, crisply cooked and crumbled
Steps
- In a large bowl, combine macaroni, celery, onion, parsley, and tomato.
- In a small bowl, prepare the dressing. Mix mayo, mustard, sugar, vinegar, sour cream and salt.
- Add dressing to the pasta mixture and stir to combine. Season with freshly ground black pepper, to taste. Sprinkle crumbled bacon on top.
