Description
This salad is much like a potato salad but instead of potatoes, use cauliflower! It is just as good, and just may become a family favorite that you will want to take with you to get-togethers from now on!
Ingredients
- 1 head cauliflower
- 6 boiled eggs
- 1/3 cup Miracle Whip or mayonnaise (light has more carbs!)
- 3 T. mustard, your choice of type
- 3 T pickle relish, your choice of type
- 1/8 cup of chopped raw onion, or to taste
- salt/pepper to taste
Steps
- Cook cauliflower in microwave, steam or boil until tender, cut in bite size pieces. Hard boil 6 eggs, peel, rinse and then separate yokes into a bowl, mash the yolk and cut the whites into small bite size pieces then blend together.
- Mix all ingredients together. You may garnish with egg slices and parsley if you would like.
- Chill over night.
