Description
Feed your family their veggies with pasta!
Ingredients
- 1 lb. spaghetti
- 3/4 to 1 cup olive oil
- 4 large garlic cloves, peeled and minced
- 1 1/2 lb. broccoli, cooked
- 1/2 cup veggie or chicken broth
- Salt and pepper to taste
- Parmesan cheese
Steps
- Cook broccoli in large, deep pot of boiling water till just fork tender. With slotted spoon, remove cooked broccoli and set aside. Add salt and more water to pot and bring back to boil. Cook pasta till al dente. Drain.
- While pasta is cooking, heat oil in another pot and brown minced garlic. Add cooked broccoli which had been cut into bite sized pieces, broth, salt and pepper and simmer 5 minutes. Add drained pasta and mix. Sprinkle cheese on top and serve.
