Serve these pizza inspired bell peppers as an appetizer or as a main dish. Serve with a side salad. Omit the pepperoni and you will have a vegetarian dish.
4 bell peppers, any color, tops, seeds and membranes removed
1/2 c. pepperoni, chopped coarsley
4 T. bread crumbs, any style
1/2 c. Italian blend cheese
onions, chopped-optional
mushrooms, chopped-optional
Preheat oven to 400 degrees. Place peppers cut-side up on a pre-greased baking sheet.
Mix bread crumbs, pepperoni, and cheese in a small bowl.
Fill each pepper with the cheese mixture.
Bake 15-18 minutes or until cheese is melted.
