Description
Make individual packets of chicken and artichokes in a wonderful sauce. This meal es easy, quick and makes for a no mess clean-up!
Ingredients
- 3 c. instant white rice, uncooked
- 3 c. warm water
- 6 small boneless skinless chicken breasts, 1/2 inch thick
- 1-13 3/4 oz. can artichoke hearts, drained, quartered
- 2 large tomatoes, chopped
- 1/2 c. Zesty Italian Dressing
- 1/4 c. pesto
Steps
- Heat oven to 400°F.
- Mix rice and water; evenly spoon onto centers of 6 large sheets of heavy-duty foil. Place chicken, artichokes and tomatoes in center of foil on rice then drizzle with combined dressing and pesto.
- Fold up foil sides. Double fold top and both ends to seal each packet so no leaks occur, leaving room for heat circulation inside. Place in 15x10x1-inch pan.
