Make individual packets of chicken and artichokes in a wonderful sauce. This meal es easy, quick and makes for a no mess clean-up!
3 c. instant white rice, uncooked
3 c. warm water
6 small boneless skinless chicken breasts, 1/2 inch thick
1-13 3/4 oz. can artichoke hearts, drained, quartered
2 large tomatoes, chopped
1/2 c. Zesty Italian Dressing
1/4 c. pesto
Heat oven to 400°F.
Mix rice and water; evenly spoon onto centers of 6 large sheets of heavy-duty foil. Place chicken, artichokes and tomatoes in center of foil on rice then drizzle with combined dressing and pesto.
Fold up foil sides. Double fold top and both ends to seal each packet so no leaks occur, leaving room for heat circulation inside. Place in 15x10x1-inch pan.
Bake 30 to 35 min. or until chicken is done and no longer pink. Remove packets from oven; let stand 5 minutes.
Carefully cut slits in foil to release steam before opening.
Serve.
Note: This meal could also be made on the grill or on the campfire.
