These cupcakes are like mini-versions of pumpkin pie! Everyone can have their own individual desserts at holiday time. But why wait for the holidays?

Ingredients

• 1- 15 oz. can pumpkin puree
• 1/2 c. sugar
• 1/4 c. brown sugar
• 2 large eggs
• 1 t. vanilla extract
• 3/4 c. evaporated milk
• 2/3 c. all purpose flour
• 2 t. pumpkin pie spice
• 1/4 t. salt
• 1/4 t. baking powder
• 1/4 t. baking soda

Steps

1. Preheat oven to 350 degrees. Line a 12 cup muffin tin with silicone liners, foil liners sprayed with cooking spray or spray the muffin cups with cooking spray.
2. Mix pumpkin, sugar, brown sugar, eggs, vanilla extract and milk. Add in the flour, pumpkin spice, salt, baking powder and baking soda to the mixture.
3. Fill each cup with 1/3 cup of the mixture.
