Lasagna Soup

Description

No time to make your favorite Lasagna recipe, but still craving it? Make this delicious and easy Lasagna soup instead. Serve it with your favorite crusty bread and a salad.

Ingredients

2 t. olive oil
1 1/2 lb. Italian sausage (bulk or links with casings removed)
2 onions, finely chopped
4 garlic cloves, minced
2 t. oregano
1/2 t. red pepper flakes
2 T. tomato paste
1-28 oz. can diced tomatoes
6 c. chicken broth or stock
2 bay leaves
8 oz. pasta, your favorite
1/2 c. fresh basil, finely chopped
8 oz. Ricotta cheese
1/2 c. Parmesan, grated
1/4 t. salt
pepper, to taste
2 c. Mozzarella, shredded

In a large pot, heat oil over medium heat. Add sausage and saute, breaking it up into small pieces with a spatula, until sausage is no longer pink, about 5 to 7 minutes. Drain any excess fat.

Add onions and saute until softened, about 6 minutes. Add garlic, oregano, and red pepper flakes and saute for 1 minute. Add tomato paste and saute until paste turns a rusty brown, about 5 minutes. Add tomatoes with their juice, the broth, and the bay leaves, bring soup to a boil. Reduce heat and simmer for about 30 minutes.

Add the pasta, increase heat to medium-high, boil soup until pasta is tender to the bite, following the directions on the pasta box. Remove the bay leaves, stir in basil. Season with salt and black pepper to taste.

In a small bowl, combine Ricotta, Parmesan, the 1/4 teaspoon of salt, and the pepper.

Serve, place about 1 1/2 tablespoons of Ricotta mixture in each bowl, sprinkle with some of the Mozzarella, and ladle the soup on top.

Makes 13 one cup servings.
