Description
These onion rings are so good, everyone will think that they are fried, but they aren't, they're baked! Serve them as an appetizer or as the perfect side dish for your favorite pork recipe!
Ingredients
- 1/2 c. flour, divided
- 1 large egg
- 1/2 c. buttermilk at room temp.
- 1/4 t. cayenne pepper
- 1/2 t. salt
- 1/4 t. pepper
- 1 t. hot sauce
- 30 saltine crackers
- 4 c. kettle cooked potato chips
- 2 large yellow onions, sliced into 1/2 inch thick rings
- 6 T. vegetable oil
- Sauce:
- 1/2 c. mayo
- 2 T. creamy horseradish
- 1 1/2 T. ketchup
- 1/4 t. paprika
- 1/4 t. salt
- 1/8 t. dried oregano
- 1/8 t. ground black pepper
- 1/4 t. cayenne pepper
Steps
- Preheat oven to 450 degrees. Move the oven racks to lower and middle positions.
- In a shallow baking dish, place 1/4 cup flour In a small bowl, combine buttermilk and egg. Whisk to combine. Stir in remaining 1/4 cup flour, cayenne pepper, salt, black pepper, and hot sauce.
- In a food processor, pulse potato chips and saltine crackers until very fine and crumbly. Place half of the mixture in a shallow baking dish and set the other half to the side.
