It is so much easier to make lasagna in the crock pot than in the oven and it is so much easier. Just assemble and forget about it till dinner time. To make it even tastier, add slices of pepperoni to the meat mixture.
1 lb. lean ground beef or mixture of ground beef and ground pork
1 small onion, chopped
lasagna noodles, uncooked
1 jar spaghetti sauce, your favorite
1 1/2 t. salt
1 t. dried oregano
2 garlic cloves, minced
1 1/2 c. cottage cheese
1 1/2 c. shredded Mozzarella cheese
1/2 c. grated Parmesan cheese
Brown ground beef and onion and drain.
Line a crock pot with a crock pot liner for easy clean up.
Spoon 1 cup spaghetti sauce in bottom of 4 quart crock pot. Mix the remaining sauce with the cooked meat. Add salt, oregano and garlic. Place 2 uncooked lasagna noodles on sauce in crock pot.
Spread 1/3 meat mixture on top of noodles. Spread 3/4 cup cottage cheese over meat. Sprinkle 1/2 cup Mozzarella cheese over cottage cheese.
Add a second layer of uncooked noodles, 1/3 meat mixture, the remaining cottage cheese and 1/2 cup Mozzarella cheese.
Place a third and final layer of uncooked noodles, meat mixture, and Mozzarella cheese.
Sprinkle Parmesan cheese over top.
Cook on low for 4 hours. If cooked much longer, it gets a bit well done.
