This salsa works well as an appetizer served with your favorite chips, in a salad or as a garnish for baked or grilled chicken. It is healthy, delicious and full of fresh flavor and ingredients.
1- 6.5 oz. jar marinated artichoke hearts, drained and chopped, reserving 2 T. marinade
½ c. black olives, sliced
½ c. grape tomatoes, sliced
2 cloves garlic, minced
2 T. fresh basil, finely chopped
2 T. capers
3 green onions, thinly sliced
1 jalapeno, seeded and diced
salt and pepper, to taste
Combine all ingredients in a large bowl; mix well. Cover and refrigerate for at least an hour before serving.
