This dip is so easy, you can prepare it right before company comes and serve it warm, right out of the oven! It is delicious as well as simple!
1 c. mayonnaise or salad dressing
1 c. freshly grated Parmesan cheese
1- 14 oz. can artichoke hearts, drained and coarsely chopped
1- 9 oz. box Green Giant® frozen chopped spinach, thawed and squeezed to drain
1/2 c. chopped red bell pepper
1/4 c. shredded Monterey Jack or Mozzarella cheese (1 oz.)
1/2 t. black pepper
toasted baguette slices, chips or assorted crackers, if desired
Preheat oven to 350 degrees.
Mix mayonnaise and Parmesan cheese. Stir in artichokes, spinach and bell pepper.
Spoon mixture into 1 quart casserole. Sprinkle with Monterey Jack cheese. Cover and bake about 20 minutes or until cheese is melted.
Serve warm with baguette slices, chips or crackers.
