  • 10-12 marinated Greek olives, pitted and finely chopped
  • 1/2 t. salt
  • freshly ground black pepper
  • 1/2 t. red pepper flakes, optional
  • 1 T. finely grated Parmesan cheese
  • 1/4 c. crumbled Feta cheese
  • zest and juice of 1 lemon
  • 2 large artichokes
  • 2 lemons
