This is a wonderfully moist, delicious cake. It is beautiful too and would be a great St. Patrick's Day or Easter dessert.
Cake:
1 box vanilla, white or yellow cake mix
3.4 oz. box instant pistachio pudding
3 eggs
1 c. oil
1 c. milk
green food coloring, if desired
Frosting:
3.4 oz. box instant pistachio pudding
1/2 c. milk
8oz. tub frozen whipped topping, thawed
green food coloring, if desired
chopped pistachios, for garnish, if desired
Preheat oven to 350 degrees. Spray a 9×13 baking dish with non-stick spray.
In a medium bowl, combine cake mix with instant pistachio pudding. Stir those together until combined.
Add in eggs, oil and milk. Stir just until combined. Stir in about 6 - 8 drops of green food coloring until fully incorporated.
Pour into baking dish. Bake for about 25-30 minutes, until a toothpick comes out clean.
Allow cake to cool completely before making frosting.
Frosting:
Mix frosting ingredients together until well mixed. Spread on the cake.
Garnish with chopped pistachios, if desired.
