Description

Fresh strawberries and cream make these muffins special. They are individual mini strawberry shortcakes in a muffin cup.

Ingredients

• 2 c. all-purpose flour
• 2 t. baking powder
• 3/4 c. granulated sugar
• 1/2 c. butter, cold and cut into cubes
• 1 egg
• 1 c. heavy cream or Half and Half Cream
• 1 1/2 t. vanilla
• 1 1/2 c. diced, fresh strawberries
• powdered sugar, for dusting

Steps

1. Preheat oven to 350 degrees. Grease or line 12 muffin cups with paper liners.
2. In a large bowl, whisk together flour, baking powder and sugar. Cut in cold butter with a pastry blender or two knives until it's in small pea-size pieces.
3. In a small bowl, mix together egg, vanilla and cream. Add this mixture all at once to the flour mixture. Stir with a spoon just until blended. Gently mix in the diced strawberries.
