Everyone loves hashbrown casserole. Tailor it to your own taste using different cheeses or cream of soup. Add cubed ham to make it a complete meal, if desired.
2 lb. bag frozen southern style hash brown potatoes
1⁄2 c. onion, finely chopped
seasoning salt, to taste
pepper, to taste
1⁄2 c. melted butter or margarine
1 1⁄2 to 2 c. Colby cheese or Cheddar cheese, shredded
10 1/2 oz. can cream of chicken soup or your favorite cream of soup
non-stick cooking spray
Preheat oven to 350 degrees. Spray a 13 X 9 X 2 baking pan with non-stick cooking spray; set aside.
Combine soup, cheese, butter, onion, seasoning salt, and pepper in a large bowl. Stir. Gently fold the potatoes into the mixture. Pour into the prepared pan.
Bake 35-40 minutes, until heated through and top is browned.
