Bacon and Cauliflower Salad

Description

In no time at all you can have a tasty side dish salad. It is easy to make and no cooking except for the bacon is required. If you don't have time to cook the bacon, use prepackaged bacon bits.

Ingredients

1 medium to large head cauliflower, washed and broken into florets
1 lb. sliced bacon, crisply cooked and crumbled
1 c. shredded or cubed cheddar cheese
1 medium green pepper, finely chopped ( or pepper of your choice)
1 medium red onion, finely chopped

1 c. mayonnaise or Miracle Whip
3 t. sugar
1/4 c. grated Parmesan cheese, optional, for garnish

In a large bowl, combine cauliflower, bacon, cheese, green pepper and onion.

Combine mayonnaise and sugar; pour over cauliflower mixture; toss to coat. Cover and refrigerate for at least 4 hours before serving. Garnish with Parmesan cheese, if desired.
