Description

This Shrimp Scampi and the sauce is so good, serve it with crusty bread to fully soak up its delicious sauce.

Ingredients

2 lbs. deveined, shrimp, peeled and butterflied with tails
1 cup flour
1 cup oil
1 1/2 cup dry white wine
1 T. Worcestershire sauce
2 T. minced garlic
10 T. unsalted butter
salt and pepper to taste
Juice from 2 lemons
1/2 chicken broth
2 T. chopped Italian parsley

Dredge the shrimp in flour. Heat oil in pan over high heat. When oil is hot but not smoking, add shrimp and saute for 2-3 minutes or until just turning brown. Saute shrimp in batch, careful not to crowd the shrimp. Remove from pan and drain on paper towels.
Stir in wine, Worcestershire sauce and garlic. When combined, stir in half of the butter, salt and pepper and bring to a boil. Return the shrimp to the pan. Stir in the lemon juice and broth and return to a boil.
Using a slotted spoon, remove shrimp and place on a warmed serving dish.
Rapidly boil the sauce for 2 minutes whisking in the parsley and the remaining butter. Pour sauce over the shrimp.
