Do you like pasta salad and caprese salad? Enjoy the best of both worlds with this yummy pasta salad.
Ingredients
- 2 lb. plum/Roma tomatoes, chopped, about 8 - 10 medium sized
- 5 garlic cloves, finely chopped or minced
- 1 1/2 t. salt
- 3/4 t. freshly ground black pepper
- 1/2 c. olive or vegetable oil
- 1/2 c. chopped fresh basil leaves
- 8 oz. Mozzarella cheese, cut into 1/2-inch cubes
- 1 lb. package rotini (sprial) pasta
- 1/2 c. grated Parmesan cheese
Steps
- In a large bowl, mix the chopped tomatoes, garlic, salt, pepper, oil, basil and Mozzarella cheese. Cover; refrigerate 2 hours to blend flavors.
- Meanwhile, cook pasta to al dente as directed on package. Drain. Rinse with cold water to cool; drain.
- In a large serving bowl, mix the cooked pasta and tomato mixture until well combined. Sprinkle grated Parmesan cheese on top of salad.
