Description
Veggies don't have to be boring. Serve them in this delicious salad for your weeknight or weekend meal. It is especially good for BBQ's and when company comes.
Ingredients
- ½ c. red onion, sliced or diced
- ½ c. diced cooked carrots
- ½ yellow, red or green bell pepper
- 1 tomato, diced
- 2 c. cauliflower, cut into bite sized pieces
- 2 c. broccoli, cut into bite sized pieces
- ½ c. celery, cut into bite sized pieces
- Dressing:
- 2 c. mayo or Miracle Whip
- 1/4 c. sugar
- 1/4 c. Parmesan cheese
- 2 t. vinegar
- 1/4 t. salt
- 1/8 t. pepper
Steps
- Wash veggies.
- In a large bowl, toss cauliflower, broccoli, celery, onion, cooked carrots, pepper and tomato.
- In a medium bowl, combine mayo, sugar, Parmesan cheese, vinegar, salt. Mix well.
