Skinny Broccoli Salad

Description

Enjoy a yummy salad and not worry about the calories with this easy salad.

Ingredients

  • 2 stalks raw broccoli
  • 1 medium head raw cauliflower
  • 1/2 c. sweet red pepper, chopped
  • 1/2 c. green pepper, chopped
  • 1 large fresh tomato, chopped
  • 1/2 large raw red onion, chopped
  • 1 large can black olives, drained and cut in halves
  • 1/2 c. low-fat shredded Cheddar cheese
  • 1 1/2 c. fat free Ranch dressing

Steps

  1. Blanch the broccoli and cauliflower about 1 to 1 1/2 minutes; chop and place in a large bowl.
  2. Add remaining ingredients; add the dressing and toss. Refrigerate 4 hours; serve.
