Description
Get the delicious flavor of that favorite cherry cola that you enjoyed as a kid in this yummy chocolate cake. It is a beautiful cake when garnished with mint leaves and maraschino cherries.
Ingredients
10 oz. jar maraschino cherries, drained, 1/4 cup liquid reserved (or more)
1 box Devil's food cake mix
1 c. cherry cola soda/pop
1/2 c. vegetable oil
3 eggs
1 container whipped vanilla frosting
1 c. marshmallow creme
24 maraschino cherries with stems, well drained, for garnish, optional
mint leaves, for garnish, optional

Preheat oven to 350 degrees or 325 degrees for a dark or nonstick pan. Spray the bottom only of 13x9-inch pan with baking spray with flour.
Chop cherries; set aside.
In a large bowl, beat cake mix, soda, oil, eggs and 1/4 cup reserved cherry liquid with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping the bowl occasionally. Stir in the chopped cherries. Pour into the prepared pan.
Bake 34 - 42 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
In a small bowl, mix frosting and marshmallow creme until smooth. Frost cake. Top each piece with 2 cherries with their stems and mint leaves, if desired.
Store loosely covered.
