Make this great side dish in a flash. This recipe is a great one to use if you have left over rice from another meal, or plan ahead and make extra for another meal. Serve with your favorite meat or fish dish.
4 c. cooked rice (left over rice is great)
1 t. dried parsley
1 c. shredded Colby Jack, shredded extra-sharp White Cheddar cheese, regular Cheddar cheese or your favorite, divided in half
3 eggs
1 c. milk
4 scallions, ends trimmed and white and light green parts thinly sliced, optional
1/2 t. seasoning salt or regular salt
1/4 t. freshly ground black pepper
Preheat oven to 400 degrees. Grease an 8x8 baking dish.
In a bowl, mix all ingredients using only half of the cheese. Spread mixture into the prepared baking dish. Spread remaining cheese on top evenly.
Bake 20-25 minutes or until heated through and cheese is melted.
