Everyone has heard of pineapple upside down cake, but how about strawberry upside down cake? It is just as good, and probably even better than the old favorite.
18 oz. yellow cake mix, batter prepared using ingredients as directed on package
2 c. crushed strawberries
6 oz. pkg. Strawberry Jello
3 c. mini marshmallows
Preheat oven to 350 degrees.
Spread crushed strawberries on the bottom of a 13×9 inch baking pan. Evenly Sprinkle the dry jello powder evenly over the strawberries; top with mini marshmallows.
Prepare the cake batter according to the directions on the box; spread evenly over the marshmallows and strawberries.
Bake about 40-50 minutes and a toothpick inserted into the center comes out clean.
Cool in the pan 15 minutes, then run a knife around the edge of the pan to loosen the sides; turn the cake out onto a serving plate/tray.
Store leftover cake in the refrigerator.
10-12 servings.
