People love zucchini fries, but they aren't always so good for you because they are typically fried. These delicious fries are baked instead, are better for you and don't lose the taste and the crunch.
Ingredients
- extra virgin olive oil
- extra virgin olive oil spray
- 4 medium zucchini
- 1 c. dry bread crumbs
- ¼ c. freshly grated Parmesan or Pecorino cheese
- 1 t. garlic powder
- ½ t. ground paprika
- 1/8 t. dried oregano
- 1/8 t. crushed red pepper flakes
- 1 t. sea salt
- 2 large eggs
Steps
- Preheat oven to 425 degrees. Line 2 baking sheets with parchment paper, then brush parchment paper with olive oil.
- Cut each zucchini in half crosswise, then cut each half lengthwise into halves or in thirds, and then each one of those pieces into 4 sticks or into ½ inch wide sticks.
- In a shallow dish/platter, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, oregano, red pepper flakes and salt.
