3 T. rice wine vinegar
1 T. sesame oil
1/2 t. sugar
1/4 t. kosher salt
1 lb. sliced Persian cucumbers
2 sliced scallions
1/4 c. cilantro
2 t. sliced pickled ginger
1/2 finely chopped red jalapeno
1 T. sesame seeds
