Description

It's apple picking time and time to make this delicious Irish Apple Cake. Enjoy it for dessert, for breakfast with your coffee or as a snack later in the day.

Ingredients

• 4 T. butter, softened at room temperature
• 1 c. granulated sugar
• 1 egg, beaten, at room temperature
• 4 Granny Smith apples, cored, peeled and diced, 2 cups worth
• 1⁄4 c. chopped walnuts
• 1 t. vanilla extract
• 1⁄2 t. baking powder
• 1⁄2 t. baking soda
• 1⁄2 t. salt
• 1⁄2 t. ground cinnamon
• 1⁄2 t. ground nutmeg
• 1 c. all-purpose flour

Steps

1. Preheat oven to 350 degrees. Grease an 8x8 inch cake pan.
2. In a large bowl, cream the butter and sugar together until light and fluffy. Add the egg, apples, nuts, and vanilla; stir well.
3. Sift in the dry ingredients; mix well.
