Ingredients

  • crust:
  • 8 oz. ginger snap cookies, crushed 1 1/4 c.)
  • 1/8 c. granulated sugar
  • 5 T. butter, melted
  • filling:
  • 4 oz. cream cheese, room temperature
  • 1 T. butter, room temperature
  • 1/2 c. powdered sugar
  • 1/4 c. egg nog
  • 2 heaping T. plain Greek yogurt or sour cream
  • 1/2 t. cinnamon
  • 1/4 t. all-spice
  • 1/4 t. ground ginger
  • 1/4 t. nutmeg
  • 1 c. whipping cream

Steps

  1. Preheat oven to 350 degrees. Grease a 9 inch pie pan with non-stick cooking spray.
  2. In the bowl of a food processor, crush cookies until finely crumbled. Add sugar and melted butter; pulse until mixed.
  3. Press crushed cookie crust mixture on the bottom and up the sides of the pie pan. Bake 8 minutes. Allow crust to cool to room temperature.
