Description
These brownies are seriously delicious. They are full of chocolate goodness that is topped with shredded coconut!. Yummy!
Ingredients
- brownies:
- 1 stick unsalted butter
- 1/2 c. sugar
- 1/4 t. salt
- 1 large egg
- 1/4 c. unsweetened cocoa powder
- 1/4 c. all-purpose flour
- topping:
- 2 large eggs
- 3/4 c. sugar
- 1 t. vanilla extract
- 1 c. all-purpose flour
- 7 oz. package sweetened shredded coconut, divided, 1/2 c. set aside for sprinkling
Steps
- Preheat oven to 375 degrees. Line a 9 x 9 square baking pan with parchment paper with overhanging sides to easily remove brownies from the pan. Spray the paper with non-stick cooking spray.
- Melt butter in the microwave in a large microwavable bowl. Whisk in sugar, salt, and the egg. When well-combined, whisk in the cocoa powder and then fold in the flour. Spread batter evenly in the pan.
- Bake about 15 minutes, until it starts to look cooked around the edges. Do not over bake! Set aside and make the topping.
